Belevskaya pastila is a unique product
The recipe for its preparation was compiled by the merchant Ambrosy Pavlovich Prokhorov at the end of the 19th century and since then has been preserved and passed down from generation to generation by several Belev masters.
Belevskaya pastila is made mainly from Antonov apples, egg whites and sugar. The apples are baked in the oven on birch logs, the pulp is separated from the peel and core and rubbed through a sieve. The resulting apple puree is mixed with egg whites and sugar, laid out on baking sheets in thin layers and dried in the oven for a long time. The resulting layers of pastila are combined into puff "loaves" using the remaining unbaked puree, cut to shape and sprinkled with powdered sugar.
Lenten pastila is prepared without egg whites, the production process is more labor-intensive and long, but the result exceeds all expectations.
Diet pastila is made from apples and a small amount of egg white, it does not contain sugar or any sugar substitutes.
