Where does thread halva come from?

Pişmaniye (peesh-MAHN-ee-yay) is an ancient Turkish sweet that dates back to the 15th century. It is also called “fairy floss”, “string halva”, “stretched halva”, “thread halva” or “line halva”. English names “Candy Floss”, “Floss Halva”, “Cotton Candy” There are many stories and local traditions surrounding Pişmaniye. In Turkish, “pişman” means “regret”. As the Turkish saying goes: “Try once and regret. Don’t try and you’ll regret it a thousand times.”

How to make it

Pişmaniye resembles cotton candy, but it has a different texture and a deeper flavor. Unlike cotton candy, it contains flour and butter. The sugary mixture is pulled into thousands of fine threads. These threads are gathered into balls and wrapped like candy. Thread halva comes in several varieties, plain or chocolate-covered, with ground pistachios or walnuts added. Pişmaniye is also flavored with vanilla or cocoa powder.

Making authentic pişmaniye requires a lot of skill. It is traditionally made by hand. First, the flour is lightly toasted with butter until brown. Second, the sugar is melted with water to a pliable temperature, then pulled and folded many times until fibers begin to form. Finally, the flour is added and carefully mixed with the sugar with repeated pulling and folding movements. This process is repeated for several minutes until the fibers take the form of a fine thread.

The Legend of Sismaniye and Pişmaniye

There are many legends explaining its origin. The most popular of them tells of a confectioner who lived in Kocaeli, who was famous for his delicacies. People stood in long lines to try some of his famous treats. Even merchants traveled from the Silk Road to sample his delicious creations. Despite his success, the confectioner had a concern. Deeply in love with a lovely and curvy lady, he had tried everything to win her heart, but his love remained unrequited. In desperation, he decided to create a brand new confection and dedicate it to his beloved, hoping to receive a return of love. He worked hard and created beautiful snow-white balls. In honor of his love, he named the sweet “şismaniye”, which means “my fat lady” in Turkish. He carefully labeled it and sent a few boxes to his beloved lady. This last effort worked and he managed to win her heart.

Soon they got married and lived happily ever after, at least for a while. Then his new bride's jealousy and trickery made his life hell. Despite his great love, he left her and changed the name of the sweet from "şismaniye" to "pişmaniye", which means "regret".
