A spice that should be in every kitchen.

This spice is one of the healthiest, but least known and underrated. The tree-shrub (also called vinegar tree) that grows up to 3 meters tall grows best in Mediterranean climates. When ripe, the sumac fruits are crimson red and 5 mm in size. After harvesting, they are dried in the sun and then coarsely ground. Finally, they are mixed with a little salt. The spice was used in Europe for a long time as an alternative to lemon juice, until the Romans spread lemons in this region. Sumach has a sour, fruity taste and is a good substitute for lemon, tamarind and vinegar, but at the same time it is more balanced and less tart than lemon juice.

Uses

It is an important spice in Arabic, Turkish and Lebanese cuisine. It is highly valued for its sour taste.

Turkish cuisine often uses it to season salads and kebabs.

Sumach also goes well with grilled meat, poultry and fish. To do this, rub the spice on the meat before grilling.
